Kale, Tomato & Goat Cheese Salad Recipe Ingredients


Here's what you'll need to whip up this crowd-pleasing salad:


Ingredients:


  • 4 ripe tomatoes, roughly chopped

  • 2-3 tablespoons sun-dried tomatoes, sliced

  • 4 large kale leaves, stems removed and leaves roughly torn

  • 3 cloves of garlic, finely minced or chopped

  • 50g hard goat cheese, shaved or diced

  • Juice of half a lemon

  • 1-2 tablespoons sesame oil

  • 1-2 tablespoons fish sauce

  • Korean chilli flakes, to taste

  • Sesame seeds

  • Stevia (or sweetener of choice), to taste

  • Sliced cucumber or capsicum (optional)

  • Pepitas (optional)

  • Either crushed walnuts, pecans or cashews (optional)



Kale, Tomato & Goat Cheese Salad Before Mixing


Here’s how to bring this flavourful masterpiece to life!


Instructions:


  1. Prepare your kale: I like to remove the kale stems and wash individually to make sure there are no hidden bugs. Shake off the excess water (aiming for the sink) and just rip off the leaves straight into your salad bowl, tearing them into bite size pieces.


  2. Tomato magic: Wash and add your chopped fresh tomatoes, then slice and add the sun-dried tomatoes, and garlic.


  3. Make your dressing: I put this all in the same bowl, splash in the sesame oil, fish sauce, Korean chilli flakes, lemon juice and a few drops of stevia.


  4. Mix it all together: With your favourite pair of tongs, start tossing around the salad to make sure that the dressing gets around.


  5. Final touches: Garnish generously with goat cheese, I like to dice in decent chunks, sesame seeds, and pepitas if desired.
